Fresh Pineapple Salsa
Ingredients
- 2 cups minced fresh pineapple (or substitute one 16-oz can of crushed pineapple)
- 1/2 to 1 cup Thai sweet and spicy chili sauce
- 1 cup fresh chopped cilantro
- Pinch of salt and white pepper

Directions
- Mince pineapple into fine pieces and place in a bowl.
- Start with 1/2 cup of sweet and spicy chili sauce and mix with pineapple. Continue adding sauce, 1/4 cup at a time, until you reach your preferred consistency and flavor.
- Add chopped cilantro, plus salt and pepper to taste.
