Ginger Lime Cooler Recipe – Fresh Version
Ingredients
- 1 cup freshly-squeezed lime juice (approximately 8 limes)
- 1 1/2 cups granulated sugar
- 3/4 cup boiling water
- 1/4 – 1/2 tsp freshly grated ginger
- Cold water
Directions
- Place 3/4 cup of water and finely grated ginger in a small saucepan. Remember, a little goes a long way with ginger—you do not want to overdo it.
- Bring to a boil and cook for 2 minutes.
- Remove from heat and add sugar, stirring to dissolve.
- Let it sit for approximately 5 minutes, stirring every minute.
- Cool for 30 minutes.
- Add the lime juice to the sugar water and stir well.
- Pour into a 2-quart pitcher.
- Stir in enough cold water to fill the pitcher.
- Serve over ice.
Variations
- Healthier version: Substitute honey for the sugar. Follow the same instructions, adding honey to the boiling water first.
- Boost nutrition: Use coconut water instead of plain water for the final step. Even canned or bottled coconut water adds great flavor and benefits.
- Add fizz: Replace plain water with seltzer water for a sparkling version.

Ingredients
- 1 can of frozen limeade concentrate
- 1 (16 oz) bottle of cold gingerade (found in the bottled juice section)
- Approximately 25 oz of carbonated water or seltzer
Directions
- Open the frozen limeade and pour (or scoop if fully frozen) into a 2-quart pitcher.
- Add the entire bottle of gingerade.
- Use seltzer or carbonated water to fill up to 2 quarts.
- Stir and serve over ice.
