Ambassador Macadamia Nut Chicken Recipe
Restaurants around the world change their menus regularly to reflect current popular dishes, economic necessities, and the imagination and skills of the current chef. But there are always favorite dishes that patrons remember fondly. The Polynesian Cultural Center is no different, we weigh out and make changes very carefully, fine tuning our meals to best reflect the needs and tastes of our international visitors. But we keep some dishes very close to our heart. One of most popular dishes from the past is the beloved Ambassador Macadamia Nut Chicken and it is amazingly easy to make.

Ambassador Macadamia Nut Chicken
- 2 pounds boneless chicken thighs, chicken breast, butter-flied, or chicken tenders (rinse and drain)
- 1 teaspoon garlic salt
- ½ cup flour
- 2 cups panko (Japanese style toasted bread crumbs)
- ½ cup macadamia nuts, coarsely chopped
- 3 to 4 cups vegetable oil
Directions
Season chicken with garlic salt. Mix flour, panko, and nuts. Press to coat chicken with panko mixture. Heat oil in deep sided pan. Brown chicken on both sides on medium high heat. Reduce heat and then cook chicken until done. Drain on paper towels. Cut into serving pieces and place on serving platter.
Serves: 4 to 6
